Caramel Covered Apple Rolled In Toasted Coconut”. Nice Caramel Nose. Caramel Apple Mid. All comes together at the end and leaves you with a bit of Phunky Toasted Coconut! This is what happens when you accidentally blend the Toasted Coconut Rye and Caramel Rye. We didn’t love it at first. Tried it again a month later and saw potential - blended in some “apple hard candy” finished Rye you only get from River Drive Cooperage finishing barrels - a quick toast - annnnnnnnd here we are

    Batch #13 / Grape Philly

    Proof 108.9 | ABV 54.45%

Rye Finished in Oak Grape Brandy, 32 Year Armagnac Conditioned Ex-Wine, and Sauternes Barrels

Phunky like the other Philly Blends - but now we are conditioning an ex-white wine barrel (just as a winemaker might in between uses) with 32 year Armagnac before accepting the barrel into bond.

  • Batch #14

    Batch #14

    Proof 120.8 | ABV 60.4%

    Straight Bourbon Blend

We went in to find a SIB and ended up wanting to do a blend. I believe that this barrel #96 might have beat out the close 2nd, Barrel #100. We all made jokes that it would be the “Climax Barrel” due to the display of funny noises and dancing from Jeff Henley while sampling it.

    Proof 104.2 | ABV 52.1%

Rye Finished in Ex-White Wine Apple Brandy and Ex-Bourbon Apple Brandy Barrels then Toasted using Toasted Oak Spirals

The nose is toasted caramel drizzled on fresh juicy apples. The palate is pure caramel candy apple rye. The ex-white wine barrel keeps the juice flowing. The finish is brown and cane sugars mingling with dark fruits just before rye spice and ethanol remind you this isn't the pumpkin patch.

  • Batch #19 / Toasty Vanilla Peach

Batch #19 / Toasty Vanilla Peach

    Proof 112.2 | ABV 56.1%

Straight Rye Whiskey Finsished in Peach Moonshine Barrels, Mexican Vanilla Barrels, Toasted Oak Barrels

The nose is stone fruit and slightly toasted vanilla. The palate is like peaches dipped in a Mexican vanilla sugar cane reduction and grilled using scotch cask staves as wood. The finish cleans up nicely with peaches and slight minerality.

  • Batch #20 / Experimental Joey's Barrel

    Batch #20 / Experimental Joey's Barrel

    Proof 113.2 | ABV 56.6%

    Straight Bourbon Blend

The nose is like toasted cereal, caramel, and slight ethanol. The palate is creamy-oily, with slight minerality and toasted sugars on top of creme brule. The finish is like you kept the berries on the side of your creme brule and then ate them with the last few bites. When these barrels arrived they had 'experimental' stickers on each one. When we reached out they said it was a proof per gallon location experiment that was ended. That's all the info we have.

  • Batch #24 / The Goat

    Batch #24 / The Goat

    Proof 122.8 | ABV 61.4%

Straight Bourbon Single Barrel Barrel #82 Mash and Journey Patreon pick—Buttercream and smoke on the nose. Palate is cotton candy, creme brûlée, buttery mouth feel and then a citrus burst. The finish is long and oily with hints of chocolate espresso and dark fruit. Think OC batch 9.

    Proof 124.4 | ABV 62.2%

    Mash & Journey Barrel Pick

  • Batch #26 / Toasted Coconut

    Batch #26 / Toasted Coconut

    Proof 108 | ABV 54%

Rye Finished in toasted oak, coconut brandy and pineapple brandy barrels.

On the nose, bright pineapple with light coconut oil and milk notes that follow and smooth out the bright tropical fruit note. The nose carries into the palate nicely with the addition of rye spice and toasted coconut. It cleans up nicely without being dry like you think a 95% rye should.

  • Batch #27 / Blueberry Philly

    Batch #27 / Blueberry Philly

    Proof 110 | ABV 55%

Rye Finished in Oak Blueberry Brandy, 32 Year Armagnac Conditioned Ex-Wine, and Sauternes Barrels

Slight earthy funk delivered by slight ethanol. The palate showcases a nice rye spice surrounded by the tobacco notes of the finishing barrels. It begins to show slight blueberry notes on the back of the palate. The finish cleans up with rye spice-more tobacco and a nice jammy blueberry closes the door on this one.

  • Batch #28 / Apricot Honey

    Batch #28 / Apricot Honey

    Proof 104 | ABV 52%

Straight Rye Finished in Oak Apricot Brandy and Ex-White Wine Honey Barrels

The nose is funky, sweet, citrus marmalade. On the palate, aged apricot compote turns into a sweet oak and tight rye spice finish.

  • Batch #29 / Toasty Vanilla

    Batch #29 / Toasty Vanilla

    Proof 116.8 | ABV 58.4%

Straight Bourbon Finished in Mexican Vanilla Barrels then Toasted with Oak Toasted Spirals Vanilla plus all the classic, big MGP notes on the nose. This bourbon would've obviously done well without a finish. The nice viscosity on the palate brings on an initial burst of cocoa then opens up to vanilla then immediately a vanilla-chocolate mix that is reminiscent of a vanilla tootsie roll. The finish stays tootsie roll and is stagg-esque.

  • Batch #30 / Blackberry Honey

    Batch #30 / Blackberry Honey

    Proof 114 | ABV 57%

Affectionately referred to as the ‘peanut butter cup’ bottle.

Caramel, love the baking spice, burnt sugar, nice sweet oak, some leather and tobacco without being dry. Long finish.

  • Batch #33 / Heavy Char Rye

Batch #33 / Heavy Char Rye

    Proof 108 | ABV 54%

Barrel King Heavy Char Rye (SiB, batch 33)

Smoke on the nose – molasses - chocolate – and more smoke. It’s like flambé Sundae toppings with charred marshmallows – I love this so much because you don’t lose the Rye even though the Heavy Char barrel really transformed this whiskey.

  • Batch #34

    Batch #34

  • Batch #36 / Sassy Patty

    Batch #36 / Sassy Patty

    2023 ASCOT Double Platinum Winner

    Proof 129 | ABV 64.5%

    Straight Bourbon Single Barrel

Nose: Delicately piercing proof delivers notes of Marzipan, Chocolate, Sweet Oak, and after 10 minutes of air it smells of Snickers but then at about 12 or 13 minutes it goes all chocolate.

Palate: Again - VERY DELICATE BUT SHARP - Very Sweet up front, Marzipan, Vanilla, Caramel, Movement is Natural but tip of tongue stays active. Mid-palate turns to Anise, Dark Chocolate, Sweet Oak. I am getting a slight bit of the “barnyard” but not as much as I was hoping for - maybe next time.

Finish: This has a beautiful sweet oak and bakers spice finish that last well beyond a minute if you count the KY hug…or should I say IN Hug ;)

  • Batch #37 / You'll Shoot Your Rye Out

Nose: Brown Sugar, Light Menthol, Fruity Pebbles.

Palate: Movement is natural and has a nice hug, esters go away after proper air, Sugar Brûlée, Caramel, Chocolate, slight Earth on Mid - Palate.

Finish: Dark fruits linger on tip of tongue about 10 to 15 seconds and a Candy Spice cleans up around 20 seconds. Slight numbing effect subsides around 40 seconds.

    Proof 115 | ABV 57.5%

Straight Bourbon Finished in WFE Barrels 21% MGP Bourbon Finished in one of the finest Willett WFE Foil Purple Tops on the floor.

Nose: Bringing some amburana qualities like cinnamon, cream, milk chocolate, as well as slight pink peppercorn, some dark berries, chai tea, and a bit of crafty funk.

Palate: A punchy ferment like proof delicately but quickly delivers notes of Dark Fruit, very ripe strawberries dipped in a milk and bitter dark chocolate blend then dusted with cinnamon, and some sweet oak.

Finish: Under a minute and tight - (sweet) Strawberry (bitter) Rhubarb Pie with cinnamon and nutmeg (slightly yeasty) Spiced Flakey Crust finished off in a cast iron skillet of brown butter.

  • Batch #41 / Cherry Cream

    Batch #41 / Cherry Cream

    Proof 118.4 | ABV 59.2%

    Straight Bourbon Single Barrel

Nose: Charred Cherry Cheese Danish and Sweet Oak with a dusting of cracked rye and black peppercorn.

Palate: This is a full palate experience with forceful movement that gets right to business with a rye cinnamon spice quickly delivering notes of Char, Cherry, cream, sweet oak, and fresh earth.

Finish: Is well beyond a minute - goes back to the nose like Groundhog Day in a glass… charred cherry cheese danish with oak, pepper, rye, with some chocolate, matcha, and marzipan dust sneaking up during the end of the finish.

  • Batch #42 / BETA

    Batch #42 / BETA

    2023 ASCOT Double Platinum Winner

    Proof 122 | ABV 61%

Straight Bourbon Single Barrel Tastes like an artisan pop tart.

  • Batch #43 / Fruity Pebbles

    Batch #43 / Fruity Pebbles

    Proof 113.8 | ABV 56.9%

Nose: Sponge cake, pouring honey, a bit of caramel apple, and some cheesecake. Not your typical rye notes. This is a bourbon drinkers rye, as Jarrod has said. Damp wood lingering in a pond of flavors. Caramel butterscotch cookie towards peak smell. Batch 49 smells incredible. There is some mint, but not overdone by any means.

Palate: Special K cereal with yogurt and berries, followed by marshmallows from Froot Loops cereal and milk. This is insane. Batch 49 is a robust rye that coats the palate with some brown sugar and Unami of a hint of salt, mushroom, and prosciutto. Complex as hell; after over 45 minutes, it opened up.

The finish lasts about 30 seconds, and flavors will still linger on the palate for at least a minute. Lots of blinds to do with this one, and one of the greats in Ryes! Nobody can do it like the King!

6 yr MGP 21% rye Bourbon Finished in Ex-white wine honey and Ex-rare bourbon barrels

Nose : Red Fruit, sweet cereal, Charred citrus, very staggesk ,after some air the honey notes peak out from behind the Bourbon Barrel Finish.

Palate: I have been told this resembles a Jack Daniel Single Barrel Barrel Proof by a very respected palate and I don’t disagree. Very Barrel Forward, lots of dark fruit, deep honey notes - not the sugary ones but dark floral notes like you can tell that the bee got the honey from flowers and not fed sugar water. Oatmeal with brown sugar and sweetened raspberries with a pad of butter to finish. This palate movement is very active and just so much fun. I love this bottle so much. I declare this the best honey finish I’ve had since B1 Belle Meade. It’s possible that this is is even more complex than the Belle Meade and id say it may spank it in a blind because I believe this Knighted Honey works harder. But its been a while and I could be biased.

Finish : This pour has nice ethanol and oily spice throughout and it sticks around for most of the finish. I personally like balance with something like a honey finish so I am looking for that heat in pour like this. The finish is all feels and ether with the strong charred oak and some honey just doing a nice dance to the end. The finish is beyond a minute and a half for me.

Finish: Chinese five spice, oak, great palate movement and finish coverage, for me this cleans up very nicely around and finishes at 1 min 20 seconds

Even though this reminds you of a really good 10 yr purple top it is not finished in a Willett. I am so excited to be on this journey with you all.

Almost reminiscing of a very well done old fashioned with dirty cherries. The Banana bread that was so prevalent on bottling day reappears in the finish. Batch 81 is a rollercoaster of flavor and different at all points of air. It changes several times between fresh crack to empty. It blows my mind how different this profile is with the exact same barrel stocks I’m using. I am on my 2nd bottle of this and I am still finding new notes and expressions.

  • Batch 82

    Batch 82

    Proof 116.2 | ABV 58.1%

Blend of 7 yr 45% Wheated and 9yr 21% Rye Bourbon. Finished in OWA, XO Brandy, Sherry, Cognac, and Armagnac Barrels. (Pulled out of batch 83 Magnificent 7, prior to finishing in Purple Top and Stagg barrels)

Nose - Soft and conditioned leather hits the nose first while tobacco intertwines. The nose is creamy and full after a few moments to breathe. Dark plums and sweet peaches are subtle but present.

Palate - Sweet oak, tobacco and leather live in harmony up front. This transitions into a sweet dark raspberry cream. The oils in this bourbon are superb and coat the palate generously. This bourbon would accompany a good cigar wonderfully.

Finish - This is where the other finishes really shine through. A deep sherry note emerges on the palate and lasts forever. Red fruit bomb as this bourbon slowly fades away, leaving you wanting another sip.

    21% rye

Nose: The Backdrop of Sweet Oak and Custard deliver notes of white peppercorn, marzipan, citrus zest, fresh black soil, and cinnamon.

Palate: The palate movement is natural and full without effort. Sweet oak infused custard crème brûlée dusted with Saigon cinnamon and topped with a dollop of fresh orange apricot compote marmalade then garnished with one fresh sliced strawberry. The longer this sits in the glass it is almost as if they put a few curls of a nice high cacao chocolate on the side and the oak starts to shine through.

Finish: lasting well over a minute its very dessert custard and starts to turn just slightly drier that then turns on all of your saliva defenses and you have no choice but to start all over. Very impressive selection SFBS, Bravo!

    Proof 110.6 | ABV 55.3%

(11-year, 36% rye MGP single barrel with one gallon or less of 9-year, 36% rye MGP added prior to bottling)

Nose - Red Berry Bomb on the nose. Creamy and deep. Notes of an iced pastry follow up the berry and create an illusion of cherry pie.

Palate - The 11 year Bourbon steps forward out of the gate and gives you some sweet oak. It does quickly reward you, pushing a brown sugar into the mix and undertones of the red fruit blossom under sugar and oak. Overall, a beautiful mix without being overbearing.

Finish - Sweet oak reigns supreme but allows just enough of a powdered sugar note to come through, leaving a satisfying ending.

  • S2.24 (barrel 68) SiB+

    S2.24 (barrel 68) SiB+

    Proof 107.2 | ABV 53.6%

(11-year, 36% rye MGP single barrel with one gallon or less of 9-year, 36% rye MGP added prior to bottling)

Nose - very consistent with 1.24. More berry but overall very, very close.

Palate - more sugar forward and a little less oak. Has a little more spice to it, despite being a lower proof. This one coats the palate very well. Slightly less complex but sweeter if that's what you're looking for.

Finish - chalk candy. A lot of wonderful chalk candy. The sugar does subside to a degree, leaving a taste of Runts candy behind. Cherry and orange. Very, very good!

  • S3.24 (barrel 141) SiB+

    S3.24 (barrel 141) SiB+

Nose - Barrel char and Marshmallow. Faint aroma of strawberry.

Palate - sweet smoky barrel char and then a strong hit of fruity laffy taffy. All strawberry laffy taffy. Excellent.

Finish - nice sugary finish. The oil really helps a delicate flavor profile carry. After about 30 seconds, it finally let's up and the char takes it over the finish line.

  • S4.24 (barrel 132) SiB+

Nose - very subtle nose but lots of vanilla and berry when it announces itself. Like a sherbet ice cream on the nose.

Palate - such a great mixed berry explosion. Very oily and the palate is simply amazing. Tons of the vanilla and berry. Berry yogurt maybe?

Finish - amazing swan song from this one as the berry medley fades, the sweet oak and char take the final bow.

  • S5.25 (barrel 131) SiB+

Nose - Older nose, less powder sugary and more oak and deeper brown sugar notes.

Palate - This translates to the palate as well. This one drinks older and the oak does make itself known. This one is a classic older bourbon for the fans. The fruity notes are still there, the char and oak just take center stage.

Finish - Fruity cardboard on this monster.

  • S6.24 (barrel 142) SiB+

(11-year, 36% rye MGP single barrel with one gallon or less of 9-year, 36% rye MGP added prior to bottling)

Nose - brown sugar leaning into a maple syrup. Not strong but very pleasant on the nose as it swirls in the mix with the char notes.

Palate - this one punches way above its weight class. Drinks way fuller than the 104 proof would suggest. Very concentrated. The sugar and syrup notes do hit on the palate as well. Not overbearing whatsoever but do stand out.

Finish - campsite pancake. Maple, vanilla and beautiful char notes

Nose - Berry Strudel on the nose. Its all there. Icing and vanilla. Strawberry and Raspberry. Strong and glorious.

Palate - Nose transitions well and insert just a little bit of that signature cardboard note. Great transitions and mouthfeel.

Finish - More of that cardboard note and lots of sugar with the berry notes dancing in the background.

  • S8.24 (barrel 137) SiB+

Nose - Very powdered sugar and vanilla. Blackberry and raspberry undertones. If you're a pie eater - this is for you.

Palate - A nice soda pop hit up front that gives way to the berry pie undertones. This one has a massive flavor palate and probably a ton more notes can be pulled.

Finish - Sugary berry oak finish. This is a great combo of the nose and palate with the punch of age.

  • S12.24 (barrel 136) SiB+

    S12.24 (barrel 136) SiB+

    Proof 111.2 | ABV 55.6%

(11-year, 36% rye MGP single barrel with one gallon or less of 9-year, 36% rye MGP added prior to bottling)

Nose - This barrel is very, very similar to S11. I think a raspberry note is a bit more prevalent than maybe the plums though. Very close, very good.

Palate - Again, wonderful palate. consistent and balanced. No fireworks or spikes. Apples, raspberries and sugary goodness. This one is confectionery and wonderful.

Finish - This one hangs around for a long time. In the best possible way. It coats incredibly well and leaves a taste similar to having had a bowl of fruit cobbler.

  • S13.24 (barrel 75) SiB+

    Proof 108.6 | ABV 54.3%

(11-year, 36% rye MGP single barrel with one gallon or less of 9-year, 36% rye MGP added prior to bottling)

Nose - Red fruit and stone fruit. Apricot and plum with a splash of grape. So much fruit explosion. This is one to sit and drill into.

Palate - This one has that effervescent quality to it on the palate. I might call this one the soda shop barrel. It's got all the fruit but with that refreshing palate. Really unique and cool.

Finish - The finish isn't overbearing but it holds on longer than I would have thought it would just considering how the palate carries. Again, this is one you have to experience.

  • S14.24 (barrel 72) SiB+

    S14.24 (barrel 72) SiB+

    Proof 106 | ABV 53%

(11-year, 36% rye MGP single barrel with one gallon or less of 9-year, 36% rye MGP added prior to bottling)

Nose - This barrel really wears its age well. Such a great balance of traditional notes.

Palate - Balanced. so good. This one is fireworks but its fireworks all the way across the palate. Light cocoa and plums. This one has a notably good oily coverage.

Finish - Confectionary sweetness full of cocoa and barrel char. The finish just confirms what the palate tells me about the oil. This thing has staying power.

  • S15.24 (barrel 139) SiB+

    S15.24 (barrel 139) SiB+

    Proof 104.5 | ABV 52.25%

(11-year, 36% rye MGP single barrel with one gallon or less of 9-year, 36% rye MGP added prior to bottling)

Nose - A savory nose on this one. The oak and barrel char are doing something special here. It's not a BBQ sauce scent but there are similar notes.

Palate - This SIB carries a little more age on the palate than some others. The saucy notes do carry into the palate well and I think this one will be a great end of summer sipper.

Finish - This is the part that really completes the picture. The char pushes well into the palate and really gives the savory body that cookout finale.

  • S16.24 (barrel 50) SiB+

    S16.24 (barrel 50) SiB+

    Proof 104.5 | ABV 52.25%

(11-year, 36% rye MGP single barrel with one gallon or less of 9-year, 36% rye MGP added prior to bottling)

Nose - Pears, oranges and caramel. A nice citrus up front that gives way to caramel and cocoa. The barrel influence barely peeks its head out here but it's not hard to find.

Palate - Heavy cocoa on the palate. It does fade quickly and lets the citrus notes push through and take the palate through. Chocolate covered oranges. Final answer.

Finish - Chocolate blooms back as an almost reversal of the palate to end the experience. Once it does finally fade, the age on the bourbon closes the curtain.

  • Batch #91 / Apple Pie

    2025 ASCOT Platinum Winner

This batch was a collaboration between Matt Porter (ADHD Whiskey), Dan Shook and Sean Paisley (Bourbon Junkies & Evernorth Spirits), Ryan Alves (Bourbon Outfitter) and Barrel King!

    Proof 117.6 | ABV 58.8

(Blend of 6-9 year 21% MGP Bourbon finished in Stagg and Lairds Apple brandy barrels).

Nose- Very confectionery and sweet. Notes of powdered sugar and barrel char are prevalent. Under tones of sweet cinnamon and baking spices. Light apple notes dance in and out without being intrusive or overwhelming. Smoked Apple Pie might be the big picture note.

Palate- The oil on this bourbon is immediately apparent as it coats the mouth thoroughly. Red apple notes hit up front and dissipate into powdered sugar and then into beautiful barrel char notes. The confectionary consistency is throughout this bourbon, making it very crushable.

Finish - This is where the age really shines on this bourbon as the sweet dessert notes slowly fade into barrel char that carries long and satisfyingly. Overall, this bourbon takes you on a roller coaster from nose to finish. Starting sweet and letting you know it has the age at the end.

  • Batch #92

    Batch #92

    2025 ASCOT Double Platinum Winner

    Proof 113.4 | ABV 56.7%

75%- 9 year and 11 year 36% rye, 25%- 4 ½ year Southern Distilling barrel. Finished in Stagg Jr and toasted barrels.

Nose - Vanilla and marshmallow. The toasted barrel influence sings on the nose. The barrel char notes lend well into a strong reminder of toasted marshmallow. The sweet oak supports the main notes well as a nice undertone.

Palate - The palate on this bourbon is so interesting. It is definitely one you will want to sit with as it does drink very complexly in a wonderful way. Toasted notes ring through and loads of the vanilla carry in followed by a hint of Korean BBQ.

Finish- The finish rides on the back palate with the sweet and saucy note riding on the back of your tongue while the barrel char notes front load for a full experience. Such a great experience with this blend.

  • Batch #93 / Jackson Backyard BBQ

Batch #93 / Jackson Backyard BBQ

    2025 ASCOT Platinum Winner

    Proof 116.3 | ABV 58.15%

(Blend of 9 year 36% rye bourbon finished in EC23 barrels, 6 gallons of 7 and 9 year 21% rye bourbon finished in heavy Stagg, Jr barrel and 40 gallons of batch 92 (9 and 11 year 36% rye bourbon and a small amount of 4.5 year Southern Distilling bourbon).)

Nose - a lovely baked apple with light cinnamon and baking spice melody. Some hints of a milk chocolate and stone fruit under the initial nosing as this extremely complex nose opens up. After a few minutes, a light barrel char bouquet begins to appear. This is a perfect Fall drinker. Deep, dark and a lot to explore.

Palate - Sweet, savory and a little tangy. A lot of savory notes dance in the palate here and the oily body keep the flavor to the forefront. Loads of brown sugar and hard candy sweetness. There is the signature cardboard flavor woven into the palate, complementing the experience. There are so many flavors hitting here - fruity and savory while being sweet. Like the most exquisite sauce. Once it's had a moment to open - this thing punches hard. Very fitting name for this batch.

Finish - Just as it implies, all the finishes in this bourbon show in spades at the end of this pour. The EC23 pushes the dusty and oaky notes while the Stagg finish throws apples, raisins and plums at you. It just holds on. As the curtain closes, the flavors mesh together and a cardboard note watches the lights go out.

  • Batch #94 / Sid's Blend

(Blend of 4-11 year 14% (NC) , 21% (IN) and 36% (IN) rye bourbon finished in Blackberry and Bookers Barrels)

Nose- blackberry cobbler topped with sweet cream, white wedding cake

Palate- blackberry baked goods shine in the front of your palate; not overtly sweet. Super juicy and oily all over. Mid palate, that baked blackberry stops and your palate transitions into a creamy peanut butter influenced by the Booker barrel. This is also where the heat and spice kicks in!

Finish- Seasoned wood, sweet soil and rye spice linger on your palate. Smoke and char at the end of your transition.

  • Batch #96 / The Delta

    Batch #96 / The Delta

    2025 ASCOT Double Platinum Winner

    Proof 112.2 | ABV 56.1%

(Blend of 55% 8 year Turkey , 40% 7-11 year MGP and 5% toasted 4yr Southern. Some MGP was finished in Stagg jr barrels.)

Nose - Butter and Creme. Cake batter with apricot and peaches.

While opening up, sweet oak and light cracked pepper undertones the main notes in a wonderful marriage. Black cherry and raspberry join in. The nose on this goes so deep and complex. If you are a heavy noser - this is going to be your jam all day.

Palate - so oily and silky. First taste, it's so upfront you forget to taste it. Apples and berries strike me first. Baking spices and nutmeg hit along with them in stride. Beautiful rickhouse funk and oak. There is absolutely no mistaking what juice is in this blend. Toasted Marshmallow pops in and out with maybe light sugar cookie?! Then towards the end of the palate - sweet tea. This is a very complex pour and something you will have to go back to over and over to find new things.

Finish - very creamy and sugar sweet. This is a mouth watering bourbon. The finish lasts forever and the sweet finish fights forever until giving way to a sweet rickhouse oak final note. The nose and finish on this bourbon are in perfect harmony.

(Blend of: 360 bottles of batch #96 (Delta) as base, 3 barrels of 9 and 11 year Stagg finished, 1 barrel of 17 year American Light Whiskey.)

Nose - sugar and caramel. A light toasted Marshmallow aroma intertwines with a subtle nutmeg. Very enticing nose on this.

Palate - buttery cola notes hit first. As it spreads across the palate, the caramel and toast make themselves known. As the palate finishes, chocolate and barrel char complete the picture.

Finish - the finish on this is where you can really tell Delta was the base for this blend. Barrel funk and cardboard come in strong. Followed by sugary butter like a cookie dough note rounds out the experience.

  • Batch #98 / Love Story

    Batch #98 / Love Story

    2025 ASCOT Gold Winner

    Proof 117 | ABV 58.5

    Blended by Sidney Tellechea

(Blend of: 11 year 99% corn bourbon, 17 year American light whiskey, 9 year 21% rye, 8 year 95% rye. Finished in strawberry, chocolate and Stagg, jr ex-bourbon barrels)

Nose- first smell on this is angel food cake with syrupy strawberries and whipped cream on top. Very strawberry shortcake! That creamy-ness stays with you and on the 2nd whiff it smells exactly like a 3 musketeers candy bar! The fluffy chocolate mousse totally takes over. SO GOOD!

Palate- a quick kiss of sweet strawberry followed by rich, salted, dark chocolate.

Finish- Cocoa butter oil coats your mouth and you are left with a slight tingle of traditional toasted barrel taste.

    Sweet, smoke and oak!

Give me your worst, Matt Porter - I’m proud of this baby!

  • Batch #99 / Cornholio

    Batch #99 / Cornholio

    2025 ASCOT Platinum Winner

    Proof 112.7 | ABV 56.35

(Blend of 99% High Corn 11 year and American Light Whiskey 17 year. 70% High Corn to 30% American Light.)

Nose - Red Licorice (the good kind). Peaches and Apricot. A stunning sweet oak that hits just right and really adds to the nosing experience. This is a delicate and complex nose. Not an in your face experience. You can really tell this is a sit down and make an event of it pour, just from the nose alone. It all plays so well together. As it opens, I'm getting a granulated sugar note that makes me lean harder into a candy note. If cherries and peaches were rolled in sugar.

Palate - cherries and peaches continue the trend. The cherry note is a sweet ripe cherry. Not medicinal or dark. The peach quickly takes over and the Light Whiskey in this really does a phenomenal job of turning this into a oily pleasure. I don't know how the high corn removed the chocolate and butter that I usually get from the Light Whiskey but what it replaced it with is insanely deep, complex and enjoyable. The fruit notes are strong with this but your mileage may vary.

Finish - Oh my. It's so prevalent, at first that it tastes as strong as when the Whiskey was still on palate. That gorgeous sweet oak that was on the nose, it comes back on the finish and it's such a great balance. It's a flavor that I find myself chasing after. One thing I can say for sure is that this is not the notes I would usually get from our product and I mean that as a compliment. This blend is very different and I love it.

(33% Brown sugar rum finished 8 year 95% rye, 33% Maple finished 8 year 95% rye, 33% Strawberry finished Southern distilling 4 year Bourbon, 1% Batch 96 Delta)

Nose - It's a beautiful bouquet of powdered sugar with brown sugar, cinnamon and maple. There are undertones of Strawberry and plums. As it opens in glass, a red raspberry note does mingle in with the others.

Palate - on the palate, it starts off so sweet and charry. It quickly pushes the strawberry and plum notes forward. The raspberry is a bit harder to find on the palate but it's there. It truly is like a bite of stuffed French Toast. It's all there. The sweet crust, the fruit covering, the syrup...it's all there. The maple does a great job of staying in the backseat and not being overpowering. Also worth noting, there are sips that give me a Dr. Pepper vibe. Very interesting and fun pour.

Finish - After the sip has been finished, the maple creeps up here. You can taste it on your lips. But the sweet oak char keeps it in check. And it has a very nice and lengthy finish on it. It can still be felt and tasted long after.

  • Batch #102 / Voodoo

    Batch #102 / Voodoo

    2025 ASCOT Platinum Winner

    Proof 108.7 | ABV 54.35

    Blended by Matt Bunch

(33% 11 year 99% corn bourbon, 65% 11 year 36% rye bourbon finished in WFE barrels, 2% 9 year 36% rye bourbon finished in WFE barrels)

Nose - No question what finish this has on it. Red raspberry and vanilla. Red Licorice. Sweet and subtle. You can tell by the nose, this is going to be a bit more delicate. Sweet red cherry is another main player on the nose here.

Palate - So much Licorice and raspberry. As it spreads across the palate, peach and Apricot sprout up. Not an artifical peach - peach skin. As it opens, it really does have a great premium red Licorice note to it. It's a perfect balance of fruit, sweet and char notes. I heard someone else call it candy necklace note - I can't argue with that either. This is going to be one to really sit with. There is a lot there.

Finish - Another great oily finish. The red raspberry and cherry fruit note lingers forever. The age on this bourbon is elusive on the palate but shines brightly on the finish. The vanilla from the nose is also becoming more of a player on the finish as it opens. I love both of these pours for completely different reasons. Wow.

  • Batch #103 / The Jester Fruit of Despair

Batch #103 / The Jester Fruit of Despair

    2025 ASCOT Gold Winner

    Proof 115 | ABV 57.5

(Blend of: 26% 8 year Wild Turkey, 12% 8 year MGP 95/5 Rye, 62% 7 year Wild Turkey)

Nose - Well, I'm already in love. Baking spices galore upon initial pouring. As it begins to open up, a sweet oak rickhouse funk begins to show. There is no question at all that this pour goes "gobble, gobble". There are sweet peppery undertones to accompany the brown sugar, cinnamon and vanilla notes. This thing sings in the glass.

Palate - Balance! So sweet, so savory. The rickhouse funk is there - just the way you would want it. But there is a bubble gum note to it that's really nice. Like the powdered sugar bubble gum. But it's accompanied by a terrific savory finisher. I can also find some hints of cola at the front of the palate. The rye does a fantastic job of adding a nice spice across the palate and helps prop up the rickhouse oak note, really allowing the earthy notes to work in step with the candy sweetness. And this drinks very easy. It's very much a cousin to Delta. So good!

Finish - the finish absolutely cannot hide the main component of this blend. It's very obvious with the dusty notes what the star of the show is. It stays sweet but the oak let's you know it's there all the way through - making this blend taste far older. The silky palate does a good job of fooling you into thinking the finish might be light, but it's all a rouse. It goes on and on. If you are a traditional bourbon drinker - this is your choice as #1.

  • Batch #104/ Peach & Strawberry

    Batch #104 / Peach & Strawberry

    2025 ASCOT Gold Winner

    Proof 114.5 | ABV 57.25

(Batch #103 blended with a peach/strawberry finished bourbon)

Nose - You gotta be kidding me....title says it all. Perfect balance of Strawberry and peach. It's like a summer cocktail nose. The bourbon notes mingle behind and only start to blossom up and say hello as it sits and opens. The fruity candy notes remain but do balance out and allow the bourbon notes equal footing. I can already tell you, if you're into fruity notes - this is going to be your choice.

Palate - The nose would have you believe that it's going to be incredibly fruit forward. But the bourbon does play a significant role on the palate. Both the peach and Strawberry do make a marvelous appearance, the brown sugar notes play very well with them, giving you a very well rounded experience. You can still distinctly taste the base but the fruit pumps up the experience in a different way.

Finish - it's a very similar finish to the base however the candy Strawberry is there. Peach is a bit milder but you won't have to look too hard to find it. Overall, as Spring approaches - I think this will be hugely popular as we venture into nicer weather and will surely be a fan favorite. For those who gravitate towards Sidneys blends - this should be your #1 choice.

  • Batch #105 / Chocolate, Hazelnut & Apple

    Batch #105 / Chocolate, Hazelnut & Apple

    2025 ASCOT Double Platinum Winner

    Proof 114 | ABV 57

(Batch #103 blended with a chocolate, hazelnut, apple finished bourbon)

Nose - Much darker than the other 2. Light cocoa and sugar initially. Candy bar notes might be only a bit of an exaggeration. It's there i think. As it opens - light notes of red apple peel do intertwine, adding the fruit needed to really give the nose an incredible experience. Sometimes I get more chocolate but others it's the fruit that I get first. This is going to be a fun one to explore.

Palate - holy snickers bar Batman! The first drink was chocolate and nougat. The hazelnut is distinct but it also works with the chocolate to create an entirely other thing. On second sip, the bourbon comes off the starting line first - reminding me of the base that the blend was built on. But the chocolate and nougat notes catch up quick and really make this blend flip flop in a really neat way as it goes across the palate. The third sip, I am beginning to dissect this more and the apple peel from the nose is mingling with the base notes and the chocolate and hazelnut begin to play more nicely, giving such a satisfying experience. For those who want something completely different, for the adventurous and unique experience people - this is the #1 choice for you.

Finish - the base continues to dominate the finish, which I really like. But here is where the hazelnut really reveals itself. Chocolate takes a back seat and the hazelnut steps into the light more so here than anywhere else. Apple is also showing itself here in flashes and not overwhelming. Long after the drink has been had, there is a nice milk chocolate coating that hangs around. This version is so unique and fun, it's one to grab as I have never had anything else even close to it.

  • Batch #106 / Bluegrass Breakdown

    Batch #106 / Bluegrass Breakdown

    Proof 112.5 | 56.25

(50% 8 year 21% Bourbon- INDIANA, 32.5% 11 year 36% Bourbon- INDIANA, 16% 9 year 36% Bourbon- INDIANA, 1% 8 year Wild Turkey Bourbon- KENTUCKY, .5% 4 Year Southern Distilling Bourbon- NORTH CAROLINA)

Nose - Berry Medley, Powdered Sugar and Dark Chocolate. As it begins to open, there is a sweet oak aroma that's intoxicating, reminding you there is older bourbon in this blend. The Turkey juice just touches base here, lightly intertwining with that sweet oak note. Giving just a kiss of rickhouse funk. I cannot emphasize enough how much I could live in this nose!

Palate - Vanilla hits first, followed by light berries. These are the dark berries. Plums and Raspberry and Black Cherry. It's not a huge hit of berries but man, are they there. This bourbon is right up my alley. The berries give way to a buttery creme and then flips into the sweet oak and funk with powdered sugar and maybe some brown sugar to complete the experience!

Finish - Very sugary and sweet. Buttery. Only after some time, does the oak creep in. Overall, this was an incredible pour. Mixing the youthful punch and notes with the older sophisticated bourbon, making this silky and complex. Excellent!

  • Batch #107 / Berry Royale

    Batch #107 / Berry Royale

    Proof 112.8 | ABV 56.4

    ( 49% 8 year 21% Bourbon, 30% 11 year 36% Bourbon, 15% 9 year 36% Bourbon, 1% 8 year Wild Turkey Bourbon, 2% 4 Year Southern Distilling Bourbon, 3% chocolate and vanilla finished 9 year 36% Bourbon)

Nose - Creamy vanilla ice cream, whipped cream. Light milk chocolate and a light berry note at the end. This smells like a sundae. Lots of sugar, lots of cream. Berry is a bit harder to find on the nose than 106, but it's there as a wonderful undertone. As it opens, the berry does come forward more. Whipped cream with blueberries and cherries and raspberries. Then a milk chocolate rolls over the top at the end.

Palate - Berry sundae. Whipped cream, very buttery and light. But yet oily as can be. Lots of berries, lots of vanilla ice cream. If you're a dessert person - just order a case of these. This thing could be a berry smoothie or sundae. Chocolate is very creamy and light, I really can't just say enough - this is a berry sundae. It's out front, it is dominant and delicious.

Finish - A sweet oak and vanilla finish. It remains creamy and light while finishing forever. Maybe a hint of fountain soda refreshing fizz? I will leave you to tell me if I am crazy on this one. The berries may be helping me form that conclusion. Also getting chocolate more and more as I sip it. This is a wild and really fun ride. Even as a traditional bourbon drinker, I will be taking one of these for my bar too.

  • Batch #108 / Ohana

    Batch #108 / Ohana

    Proof 115.5 | 57.75

    Blended by Matt Porter

    (11% Wild Turkey 7 year, 11% 12 year 36%, 25% 9 year 36%, 53% 8 year 21%)

Nose - Red Apples and Sugared plums. Confectionary Sugar. Apples and cinnamon oatmeal. Cobbler crust. Snickerdoodle cookies. All that.

Palate - The nose does not deceive the palate. Lots of snickerdoodle cookie and apple cinnamon oatmeal. The confectionary sugar follows through and enhances the fruity and cinnamon notes, turning it into baked goods extravaganza. This really is a true marriage of families. It has the subtle nuances of a Porter blend and also throws punches like an old school BK brawler. The palate is so oily and thick, it hits the glands and holds on.

Finish - only at the very end does the oaky goodness show itself, making this blend do a real Jekyll and Hyde. It's so wonderfully sweet and confectionary up front and hits you with the wisdom and oaky cardboard note you have come to know and love.

  • Batch #109 / Aloha

    Proof 116 | 58

Blended by Gold member, Angie Fariole

Nose - sugary toasted peaches. Marshmallow fluff. Lighter than 108. A bit more delicate. Lots of notes i can't quite put a finger on. Cool Whip and peaches comes to mind. There is a Toasty note here that really brings this blend together nicely.

Palate - powdered sugar and peach syrup intertwined with a bit of blackberry and Creme. Maybe a bit of coconut Creme. This blend is effervescent. It's light and creamy on the palate but as it spreads, it opens nicely in a refreshing way. It does show hints of a cinnamon crumble much like Ohana but only small glimpses before the fruit and sugar draw your attention.

Finish - the finish on this blend goes forever. It remains sweet and light but goes the distance. That's not to say this blend is lacking, it does drink a bit lighter than the proof suggests but not by much. This blend holds the sugary notes longer into the finish before giving way to the oak notes. It's very unique. It's subtle and beautiful and at the same time, refreshing and fun.

    (81% 5 year 95/5 Rye MGP, 4% 17 year ALW MGP, 15% 8 year 21% OWA finished MGP)

Nose- It starts off light —banana and tapioca pudding hit first, smooth and creamy, followed by a soft wave of toffee and honey graham crackers. A slice of warm, spiced pound cake and then a splash of fizzy RC Cola over ice adds a crisp, unexpected twist.

Palate- The first sip is nostalgic dark soda, followed by a hint of sweet earthy grasses. A bit of char, a little zest keeping things balanced. The sweetness is right in the middle; with a spicy kick at the center and a warm wheated finish that lingers longer than you'd expect.

Finish- Pop rocks accompanied by a gentle cooling effect, leaving your mouth feeling fresh, juicy, and ready for round two. Or three..who’s counting?

Nose – Sliced Red Delicious Apples dipped in Fatty Butter Cream icing dusted with a Saigon Cinnamon and Demara Sugar mix. Vanilla Brined Pear Slivers accompany a red berry pixy stick as Garnish

Palate – Nectarine White Tea steeped briefly with hardly toasted clove give way to white and pink peppercorn eventually showing its hand. You have been had. You are left with nothing but Deep Earth and Dark Char. You are deep in a hole.  This is exactly what you wanted. Just ignore the Happy Apples at end palate. Even though these perfectly ripe apples are the Happiest, dipped in salted caramel with a wildflower honey drizzle. That doesn’t matter now, we are here for the Dark.

Finish – Eternal, this will never be finished. I gave you what you wanted. This is what you chase now.

The sweeter of the two. A liquid Pixie Stick with a tropical twist. A delicate nose feigning timidity as it desperately holds it's cards close to it's chest. After some air-time, the nose gains some liquid courage, and emerges out of its Red Skittle Shell. A well balanced palate that Builds like Bob Vila as it slowly develops into what can only be described as "Candyland." A thick and viscous pour. This is Willy Wonka's Motor Oil.

Nose - Sweet molasses and brown sugar. Light plums and citrus. Like a croissant with orange and lemon glaze.

Palate - full and oily palate. The wonderful oak presents itself first and then shifts gears to a dark brown sugar and fruit note. More dark fruit on the palate than citrus. Like a sweet berry medley marmalade over toast note.

Finish - creamy and buttery. The dark fruit hangs on and eventually gives way to sweet oak as the long finish slowly fades out. This bourbon has some serious staying power.

    Tasting notes from Dara:

Grab a seat, pull up to the bar at the candy shop and prepare your mouth for a sip of nostalgia. This is a candy lover's dream! If you're expecting a traditional rye whiskey, this is not it.

On the nose, prepare for a trip back in time to your childhood. Imagine the delightful aromas of vanilla bean ice cream, green apple blow pops, juicy fruit gum and powdered sugar.

Now you can finally indulge your sweet tooth. On the palate, you'll be welcomed with what tastes like the first moment you put sour green apple juicy fruit gum in your mouth. The rich flavor flows across your tongue with a balance of hard-candied sweetness, slightly toasted marshmallow, light barrel char, subtle notes of cinnamon and ginger, and very mild oak.

The finish is long-lasting and leaves your mouth with a nice oily coating. The sour green apple juicy fruit gum flavor lingers. This will be a pour you'll be reaching for year-round and sad that you don't have endless bottles of.
